A Remarkable “Beautiful & Rare Spanish Flower!”

Hollywood(Spiritsman)7/5/16/–El Consuelo Tequilas translation into Spanish has one interpretation as “A beautiful and rare Spanish flower.” How true! Their palate pleasing sweetness is garnered from tequilana Blue Weber Organic Agave plants that won’t mature for almost 9 years growing to 6’ in height. This mountain high farming community is the tiny village of Lagunillas Mpio. Atotonilco el Alto located in the Highlands of Jalisco, Mexico.
The farmers have created a five step time honored process. During the plants maturation they will touch the plant approximately 800 times. To keep the insects off a spraying of habanero peppered water is required. Also a gentle wiping of the leaves will keep the dust off to assure adequate sunlight to allow proper timing for pinnacle harvesting.
The Jimadors will finely trim the agave and eliminate off flavors leaving the “pina,” the heart of the plant for roasting. The result is the buttery richness that this important step creates. During the fermentation step a sweet honey water aroma is added. Every step seems to add another exceptional texture to the smoothness of their beloved Azul.
El Consuelo Tequilas are gluten free and certified 100% organic and kosher. Everything is done by the villagers and farmers from using their own proprietary yeast to utilization of their own distillery and bottling companies. The product line is supported by three unique flavors, Blanco, Anejo, and Reposado. The Reposado is the one that this reviewer enjoyed.
The Reposado gets its name as this honey liquid rests in whiskey barrels that produce a light yellow-gold hue creating a well balanced tequila. One sip and you will not be able to put that shot glass down! Enjoy with a cerveza to assist your taste buds or on the rocks. Price point ranges from $50 to $60.
