Thailand Flights of Fancy “Sky Bars”

Bangkok(Spiritsman)11/10/11/—When it comes to Bangkok’s “Sky Bars” that top hotels and apartment complexes, the sky is the limit when it comes to creativity, quality and fresh ingredients. While many of the actual recipes are closely kept secrets, we stirred up our own versions at home!

These recipes are inspired by cocktails served at the Sky Bar at State Tower, where the recent hit movie Hangover 2 was filmed.
The Hangovertini

1½ oz Absolut 100 Vodka

½ oz sweet and sour

1 oz absinthe

½ oz Monin simple syrup, or your own home blend, or agave syrup
Sky Cosmo

 1½ oz Absolut 100 Vodka house infused with cranberry

1 to 1½ oz cranberry juice

1-2 drops vanilla extract

dried cranberries, mounted at the bottom of the martini glass
Earth

 ¾ oz Chivas Regal

¾ oz Reposado tequila

¾ oz Cachaca

1½ oz Pink grapefruit juice

½ oz kaffir lime juice


Ginger Apricot Martini

1½ oz dark rum of choice house infused with apricots

½ oz ginger puree

½ oz fresh lime juice

½ oz dry Vermouth

Rosemary needle garnish

Cherry Berry Martini

 1½ oz Plymouth Gin

½ oz Luxardo cherry liqueur

½ oz fresh strawberry puree

½ oz dry Vermouth

 

These recipes are inspired by cocktails served at the Red Sky bar at Centara Hotel, at
Central World, Bangkok.

Centara Pearl

1½ oz Absolut Vodka

½ oz Creme de Mur

1 oz pineapple juice

½ oz fresh lime juice

Basil

Ginger Berry

1½ oz Absolut Vodka

½ oz Creme de fraise

1 oz fresh strawberry

1 oz raspberry purée

1 t ginger

Mint

Passionfruit Collins

1½ oz Absolut
½ oz passion fruit liqueur
1 oz passion fruit purée
Splash of sprite
Passion fruit slice

Mint
Ice cubes with mint slivers

Imperial Mojito

1½ oz dark rum of choice (LLM recommends Zacapa)

1 to 1½ oz fruit puree of choice (pictured, with passion fruit puree)
½ oz Lime juice
Brown sugar rim
5-10 mint leaves(note–Better Thai bars are generous with the mint leaves!)
Champagne topper

Hot Lychee

1½ oz gin of choice (LLM recommends Hendricks or Plymouth Gin)
1 to 1½ oz lychee puree
½ oz ginger puree
Kaffir lime leaves
Chile float
